Air fryer wings, frozen → crispy

Goal: two-stage cook—dry the surface, then blast to crisp. Notes: write what you actually did, not what you “should” do.

What I did

  • Stage 1: 300°F for 12 min (thaw + dry), shake once
  • Stage 2: 400°F for 10–14 min (crisp), shake twice
  • Sauce: (write it later)

Next time

  • Try 1 tsp baking powder per lb + salt (dry toss) for extra crunch
  • Try a cornstarch version and compare
